The best Sicilian wines come from the slopes of Mount Etna, a two-mile-high active volcano that receives a constant bombardment of winds from the nearby Mediterranean Sea. Nobody masters the area's unique conditions like Salvo Foti, who originally showed the world what Etna was capable of while working at Benanti. Now with the help of his sons, Andrea and Simone, he organically farms a single parcel of the local carricante grape to make this salty, smoky, intricately textured white wine.
