Over the last couple decades, the quality of Saint-Aubin has experienced hockey stick growth. Coinciding with that has been the rise of Jérome Fornerot. Since launching his own domaine in the early ‘00s, his whites have become some of the best sources of value in Burgundy. Fornerot makes this bottling from a high-elevation growing site that borders Chevalier-Montrachet, yielding a precise and mineral-driven white wine.
Tastes like: White peach, smoke, salted almond.
How to drink: Lightly chilled with hamachi crudo or linguine in clam sauce.
