In the mountains west of Madrid, Bárbara Requejo Frutos, who previously worked at Château Haut-Brion in Bordeaux and Pierre Peters in Champagne, only works with one grape variety: garnacha (grenache). She organically farms two tiny, high-altitude plots to make this sparkling rosé that’s crisp and a bit toasty. Only 600 bottles were produced.
