An hour’s drive east of our favorite white winemakers in Italy, Marko Fon hunts down old and abandoned vineyards in Slovenia. Using only local grape varieties, he makes textured, salty white wines that are a bit cloudy and totally distinct. This malvasia, which he ferments on the skins for a short time to add depth and aromatics, is an ideal window into Marko’s house style.
Tastes like: Apricot, sage, chamomile, sea salt.
How to drink: Chilled with cheese and charcuterie, or pretty much anything from the ocean.
