The vinegar is from the best producer in Chianti Classico, Montevertine. Using their painstakingly perfect grapes they make a small amount of vinegar every year. This is a red wine vinegar, not a balsamic vinegar. Put it on your greens, potatoes, bread, whatever you want to dress up a bit.
