This is the inaugural release from Pain-Perdu in Santa Barbara. Winemaker Fabien Castel is using the cool, coastal climate along the Pacific to produce elegant, earthy pinot noir and chardonnay. This is his only white wine thus far. Textured, nuanced, and notably salty, it would be a fun bottle to put in a blind tasting alongside unoaked White Burgundy.
Tastes like: Green apple, smoke, salted hazelnuts.
How to drink: Not too cold with roast chicken, sushi, or mushroom risotto.
