Paolo Bea is one of the founding fathers of natural wine in Italy, and remains arguably the greatest producer in Umbria today. On a tiny vineyard way up in the hills of central Italy, he makes tiny quantities of wines using local, organically-farmed grapes.

This wine is aged for five years in barrel before being bottled. The result is a deeply earthy, spicy red that’s nuanced and delicious now, but also has the structure and acidity to age for another decade or longer.
