If you see Saumur-Champigny on a label, the wine must be mostly cabernet franc by law. Cabernet franc can be made in a style similar to cabernet sauvignon, the main grape of Bordeaux and Napa Valley, which is big, high in alcohol, and usually aged in oak for a long time. But cabernet franc in a lighter style, as in this bottle, is great too—this wine is made to be consumed. It tastes like jalapeno, tart raspberry, and should be served a bit more chilled than you might think.
