Carricante, a grape variety almost exclusively grown in the volcanic soils of Mount Etna in Sicily, yields salty, crisp white wines that can be reminiscent of textured Chablis. Carmelo Sofia and his sister, Valentina, make this carricante from organic, old vines on the volcano’s northern slope. Two days of skin contact yields a rich, ripe-fruited expression of Etna Bianco.
Tastes like: Apricot, lemon meringue, smoke.
How to drink: Cold alongside hard cheeses, anchovy toast, or linguine with clams.
