Carricante, a grape variety almost exclusively grown in the volcanic soils of Mount Etna in Sicily, yields salty, brisk white wines reminiscent of textured versions of Chablis. Carmelo Sofia and his sister, Valentina, make this carricante from organic, old vines on the volcano’s northern slope.
Tastes like: Ripe peach, meyer lemon, smoke, sea breeze.
How to drink: Chilled alongside hard cheeses, anchovy toast, or linguine with clams.
