Aligoté is often treated as chardonnay’s simpler, less noteworthy white wine counterpart in Burgundy. But the fact is, some wineries have been making aligoté for ages, coaxing texture and complexity out of the lean white grape. Bitouzet-Prieur is one such producer. The classic Burgundy estate uses old-vine aligoté from just outside Meursault to make a crisp, structured wine.
Tastes like: Yellow apple, smoke, biscuits.
How to drink: Chilled alongside soft cheeses or any type of fresh seafood.
