Mallorca doesn’t have the winemaking pedigree of some other Mediterranean islands, but that’s beginning to change. The reason? Cati Ribot. After training as a sommelier in Barcelona, Cati returned to her native Mallorca, and began experimenting with the Spanish island’s extremely esoteric, native grape varieties. A decade or so later, her textured, aromatic whites are gaining a following in natural wine circles around the world. Cati makes this skin-contact white with grapes like giró ros and malvasía de banyalbufar planted in the winery’s backyard.
Tastes like: Apricot, orange zest, sea salt.
How to drink: Cold with grilled veggies, mussels, or a big cheese board.
