When it comes to natural wine in France, Thierry Puzelat's impact on the Loire Valley is comparable to that of Lapierre in Beaujolais. At Clos du Tue-Boeuf, he and his brother, Jean-Marie, organically farmed local grape varieties before anyone else in the region. Today, Thierry makes this rare white bottling is made from a blend of grapes, including fié gris. Fié gris is an old-school name for sauvignon rose, a softer, textured variant of sauvignon blanc.
