Domaine de la Romanée-Conti is the most renowned producer on the planet, and its proprietor, Aubert de Villaine, is one of the world’s most revered winemakers. A half-hour south of DRC, where he’s unencumbered by reputation or enormous price-tags, Aubert uses aligoté to make this white wine. It’s citrusy, salty, and highly refreshing.

Tastes like: Ripe peach, lemon zest, sea salt, biscuits.
