Domaine Cornu-Camus, Hautes-Côtes-de-Nuits Rouge 2021

The Cornu family has lived in the Burgundian town of Echevronne since the thirteenth century, and you’ll find their winery there today. They make this Red Burgundy from old-vine pinot noir grown at high elevation, which leads to a fresh, earthy wine. Yields were quite low in 2021, but the Burgundy that did get produced is classic. This is a prime example.

Tastes like: Blackberry, mushroom, rhubarb.

How to drink: Alongside herb-roasted chicken or ravioli with parmesan cream sauce.
