The tiny winery was launched by Hugo Mathurin and Talloulah Dubourg, who had previously worked at places like Mugnier and Clos de Tart. Jean-Marc Roulot essentially wrote their reference letter into the collectible Burgundy market. A couple years later, and Cassiopée is getting the hype it fully deserves. ‘Mitancherie’ comes from a particularly cold vineyard, yielding fresh, sharp white wine from aligoté.
