Mimi Casteel grew up in the vines of the Willamette Valley, as her father Ted Casteel is the founder of famed Oregon winery Bethel Heights. Now, Mimi runs her own project in the Willamette, making natural wines at Hope Well. Mimi is extremely passionate about her land, with organic and biodynamic farming only telling a small part of the story. The result is a range of expressive, site-specific pinot noir and chenin blanc. This example of the latter is a vibrant, salty, super fresh white wine. Only a little more than 1000 bottles were produced in total.
Tastes like: Peach, lemon zest, honeysuckle, sea salt.
How to drink: Chilled with salty cheeses, roast chicken, or seared scallops.
