Il Censo, Terre Siciliane Bianco Catarratto 'Praruar' 2021

Il Censo is a gorgeous, family-run estate in southern Sicily. It’s currently helmed by Gaetano Gargano, who credits the great Giampiero Bea as a mentor. As at Paolo Bea in Umbria, everything at Il Censo is old-school and fully organic. ‘Praruar’ is made from the local white grape catarratto. A couple weeks of skin-contact deepens the color, adds texture, and amplifies the wine’s savory, salty notes.

How to drink: Alongside grilled fish, pasta with mussels and clams, or a cheese board.
