Over the last decade or so, no source of White Burgundy has seen a quality explosion like Saint-Aubin. The village, which borders Meursault and Chassagne-Montrachet, is cooler than its more famous neighbors. As temperatures have risen, Saint-Aubin whites have gained weight and texture that was previously not possible. Now, it yields collectible wines from the likes of PYCM, Hubert Lamy, and Paul Pillot.
