On his family’s historic estate outside Corsica's capital city of Ajaccio, Jean-Charles Abbatucci biodynamically farms indigenous varieties, some of which he helped bring back from the edge of extinction. He uses one of those obscure varieties, sciaccarellu, to make this rosé. It’s herbal and refreshing, with all the bright salty notes you’d expect from grapes grown in the middle of the Mediterranean.
Tastes like: Raspberry, chamomile, tarragon, sea salt.
How to drink: Cold with sushi, cheese and charcuterie, or grilled chicken.
