Jérome Fornerot, Saint-Aubin Blanc 'Champ-Tirant' 2021

Over the last couple decades, the quality of Saint-Aubin has experienced hockey stick growth. Coinciding with that has been the rise of Jérome Fornerot. Jérome’s family has roots in Saint-Aubin dating back more than 500 years, but he only launched his own domaine in the early ‘00s. Since then, his whites have become some of the best sources of value in Burgundy. ‘Champ-Tirant’ is a village-level wine in name (and price) only. It has the richness and concentration of premier cru bottlings far more expensive.

Tastes like: Apricot, honeysuckle, smoke.

How to drink: Lightly chilled with seared scallops or risotto.
