Paolo Bea is one of the founding fathers of natural wine in Italy, and remains arguably the greatest producer in Umbria today. On tiny vineyards up in the hills of central Italy, he makes tiny quantities of this red wine from old-vine sangiovese. It’s aged in steel rather oak, so while concentrated, it’s still bright.
