Chenin blanc can sometimes taste simple and easy—like sauvignon blanc, but without all that fruity flavor. More often—and what we prefer—is chenin that tastes salty and a bit more full. Where the wine lands on this spectrum depends on the choices the producer makes in the vineyard as well as in the winemaking process. Chenin that's from organic vineyards and aged in older oak barrels, like this one, can seem more like Burgundy than like other Loire Valley whites. Baudouin is a natural producer whose whites taste more like you're sucking down an oyster than a glass of wine... in a good way.
