Sébastien Christophe is part of a wave of producers - think Eleni and Edouard Vocoret, Moreau-Naudet, or Pattes Loup - making Chablis that goes well beyond the brisk, steely whites that dominate the region. His wines have depth, complexity, and intensity, all of which are on display in this bottling from old vines originally planted by Sébastien’s grandfather in the ‘50s.
