Sebastien Christophe is part of a wave of producers making Chablis that’s concentrated and nuanced rather than simply light and refreshing. While his domaine has grown in both size and notoriety since he started it in his early 20’s, his Petit Chablis bottling has been there through it all. Pure, bright, and mineral-driven, this is a good window into Christophe’s house style.
Tastes like: Peach, lemon zest, salted almonds.
How to drink: Perfect with oysters, but it’s also great with sushi and all types of fresh seafood.
