Guímaro, Ribeira Sacra Blanco 2025

Pedro Rodriguez farms old vines of local grape varieties, which grow on dramatically steep vineyards in Ribeira Sacra, an area of Galicia in northwestern Spain. While Ribeira Sacra is nearly synonymous with reds made from mencia, Pedro makes this richly textured white wine primarily from the godello grape. High altitude, cool nights, and stainless steel-aging keep the medium-bodied white fresh and smoky.

Tastes like: Pear, lemon zest, chamomile, fennel.

How to drink: Chilled with scallops, fish tacos, or roast chicken.
