This is classic Grower Champagne, with all of the grapes coming from Herve’s own organic vineyards in Premier Cru villages in Montagne de Reims. In Champagne, villages are rated like term papers, this one is an A+. The family winery only produces around 10,000 bottles of wine per year. This dry sparkling wine – a blend of pinot noir, chardonnay, and meunier – has Champagne’s signature aromas of “biscuits straight from the oven,” as well as mouth-watering acidity that makes it an ideal pairing with anything from raw oysters to fried chicken.

Tastes like: Lemon, pear, and fresh-baked brioche.

How to drink: Good for parties and toasts. Pair it with fried foods, raw or simply-prepared seafood, or nothing at all.
