In the Aube, closer to Chablis than Epernay, Dominique Moreau makes tiny quantities of this truly singular Champagne. The domaine, which Dominique named after her grandmother, Marie Courtin, produces wines from single vineyards, single varieties, and single vintages, always with zero dosage.
Éfflorescence is one of Courtin's flagship bottlings. It's aged for three years in old barrels before release, yielding a particularly deep and powerful Champagne. Only 500 cases are produced annually.
