Aligoté lives in the shadow of Burgundy’s main white grape, chardonnay, but in the right hands, it can produce fantastic wines. For proof, try this version from Florence and Joseph Bouchard, the 6th generation of their family to make wine in Burgundy. They farm old vines at high altitude to produce a crisp, textured white wine.

Tastes like: Ripe peach, lemon zest, chamomile.
How to drink: Chilled alongside soft cheeses, salads, or any type of fresh seafood.
