Domaine de Montille, Bourgogne Blanc 2021

Along with d’Angerville, Domaine de Montille is the top address in Volnay, and one of Burgundy’s benchmarks for elegant, ethereal, refined wines in both colors. Since taking over his family’s 300 year-old winery, Etienne de Montille has lowered yields, implemented organics, and employed a gentler hand in the cellar. As a result, the wines have gone to a new level of precision and expressiveness. That’s on display in this White Burgundy, which Etienne makes from a plot just outside Puligny-Montrachet. Only about 400 cases are produced annually.

Tastes like: Green apple, smoke, salt, hazelnuts.

How to drink: Chilled but not too cold alongside scallops or ravioli with lemon butter sauce.
