Back in the ‘70s, Paul Filliatreau began making cab franc in a particularly bright and lithe style. It quickly caught on and became the norm in Saumur. While that may sound like Filliatreau is known for glou-glou wines, that’s very much not the case. Instead, their century-old vines in the Loire Valley yield red wines that are tart and peppery in youth, but which have the structure to age for decades. That’s especially on display in a sharp, high-acid vintage like 2001.
Tastes like: Plum, bell pepper, truffle, tobacco leaf.
How to drink: Stand bottle upright for a few hours before opening, decant off the sediment, and enjoy.
