Gérard Boulay’s ‘La Cote’ comes from one of the greatest sites in Sancerre, where his old vines border those of Cotat and Vatan. The soil here is the same as you’d find in Chablis, yielding a deeply minerally wine with enough structure and concentration to age for decades. Simply put, Sancerre doesn’t get much better than this.

Tastes like: Lemon zest, smoke, salted almonds.

How to drink: Chilled alongside crudo, oysters, or any dish involving Chavignol cheese.
