Rafael Palacios, Godello 'Louro do Bolo' 2021
Rather than follow in his family’s winemaking footsteps in Rioja, Rafael Palacios decided to go out on his own, setting up shop in the remote and rugged region of Valdeorras in northwestern Spain. There, on steep slopes at high altitudes, he farms godello, a white grape native to this part of Galicia. His wines are weighty and textured yet fresh and minerally, similar to leaner styles of chardonnay.
Tastes like: Grapefruit, fennel, sea salt.
How to drink: Chilled but not too cold, with chips and guacamole, ceviche, or fish tacos.
