There is no more under-appreciated great Burgundy domaine these days than Simon Bize et Fils. Bize makes wine in the small village of Savigny-lès-Beaune in Burgundy's south. There are many winemakers there, but we’d say if you’re going to remember one name, remember Bize’s—their wines embody all the country warmth of Savigny, and everything good in Burgundy as a whole. Stylistically, the reds use a high proportion of whole-clusters and the white use little to no new oak: in wine-speak, this means the reds are spicy, floral, and bright and the white are refreshing and pure.
