Because of the cold and rainy weather in Champagne, organic farming and natural winemaking are particularly difficult here. Franck Pascal is one of the few who makes it work seamlessly. From his pristine, biodynamic plots, he blends Champagne’s three main grapes - chardonnay, pinot noir, and meunier - to make this salty, rich, brioche-scented Champagne.
