Tissot is a benchmark in the Jura, both for Burgundy-esque whites and reds, and various local specialties. This is an example of the latter. Château Chalon denotes a wine style called ‘Vin Jaune’, which is made with savagnin grapes that are aged oxidatively like Sherry for years in barrel before bottling. Unlike Sherry, however, the resulting wine isn’t fortified. It’s nutty, richly aromatic, and dry.Tastes like: Apricot, salted almonds, saffron.How to drink: Chilled with rich cheeses, ideally comté, or various types of pâté.
